This vodka sauce is pretty basic but I have added three spices to just kick it up to the next level. I can dip my bread in this and use on pasta every day. It is amazing. I am sure that there are more involved vodka sauce recipes out there however here is one for those seeking the simple yet delicious version adapted from Married.
I find that by starting this off I can focus on either making fresh pasta, salads, entertaining, having a glass of wine, etc. The point is that although I suggest being in the kitchen to give this a stir every so often, it is minimal interaction. This sauce keeps up well for days after making for leftovers. For less sauce, half the recipe easily but expect a thicker sauce.
Yields: 10 servings | 1 Hr, 20 Min Total Time
- 1/2 cup butter
- 1 onion, diced
- 1 cup vodka
- 2 (28 oz) cans crushed tomatoes
- 1 pint heavy cream
- OPTIONAL: 1 tsp (or to taste) each dried basil, parsley, oregano
- In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes. Add dried herbs to taste if desired but taste the sauce BEFORE you add the herbs to make an educated decision.
