Mom’s Angel Hair Pasta with Shrimp

My Mom made this several times for us and in a family of 5 it vanished so fast that she had to make a second and third batch regularly. Make sure to serve with some great baguette or crusty bread, butter, and a hearty appetite. I am going to have to try this with fresh pasta sometime but for a quick and easy meal that you can literally make in 30 minutes or less.

Yield: About 4 servings

  • 1/4 cup Olive Oil
  • 2 cloves Minced Garlic
  • 2 tbsp Dried Parsley
  • 1/3 cup White Wine
  • 1/2 tsp Nutmeg
  • ~1 lb. Uncooked, Thawed, Peeled Shrimp
  • Angel Hair Pasta

  1. Prepare your pasta water while cooking the sauce, once water boils prepare pasta to the producers instructions
  2. Add Olive Oil to a medium saucepan, heat over medium and add garlic once olive oil is hot but not smoking
  3. Once garlic has cooked but not burned (about 2 minutes), add parsley, wine, nutmeg, and shrimp
  4. Cook shrimp in oil mixture until pink
  5. Add shrimp mixture to pasta and allow the pasta to soak up the olive oil for about 5-10 minutes prior to serving
